Wedding Cake Exam





















In my last year of school, one of our exams was to create a wedding cake using these components:

rolled fondant
chocolate box
truffles
sugar work
piping skills
fondant roses
marzipan fruit

I created an 8-tiered wedding cake with the theme of a "Touch of Spring". Each tier was enrobed with sea shell piping using vanilla buttercream, fine piping on each tier all around the cake and the top mounted with fruit, flowers, birds, chocolate and sugar.

Dalton McGuinty Desserts!

















Last year I received an opportunity to cater for Dalton McGuinty. He came to the college to fund the new campus and Days before My French chef and I created over hundreds of desserts, coffee mousse, raspberry mousse and strawberry mousse. Our final piece was a slab cake that was done a day before. It had the school logo written on it with rice paper and was placed in the center of the room for Mr. McGuinty to cut into it. There was also an ice sculpture that my chef created that looked absolutely gorgeous! Here are some photos...

Pear Competition


A few months ago, I had a visit while I was in school from a pear expert. She showed me the various types of pears out there, that at the time I wasn't aware of.

We used Green Anjou, Red Anjou, Bartlett Pears (my favourite kind!), Red Bartlett, Bosc Pears, Comice, Seckel, Starkrimson, Forelle and concorde.

After her lesson, she gave us an opportunity test out a mock pear competition that had a time limit of 30 minutes. We had to be creative and use any kind of pear and the products around us. The result: Vanilla Butter roasted pear in a phyllo cup with a spiced pear sauce garnished with a crimson pear chip. (Unfortunately there is no picture, however several weeks after, I entered a pear competition and I create this . . .)

Spiced Pear Mousse in a White chocolate cone with toasted spice pear chip finished with a pear caramel and spun sugar.

After many attempts to be creative with pears this is what I created.
